Whether slow roasting a shoulder or grilling lean chops, we have a large selection of Pork products. Our butchers believe in sustainable practices and offer a variety of cuts to deliver the most from each animal. Using pork belly for a perfectly rolled porchetta, jars of lard for savory baking, fresh house-made sausages, beautifully tied festive roasts, and our in-house charcuterie program, pork is honored and revered behind the Gwen counter.
Rib Chops
Pork rib chops are cut from the front portion of the loin, taken from ribs 4-13, and contain a moderate level of intermuscular fat(marbling). Very similar to pork loin chops(actually the same muscle on the animal), but slightly fattier, lending a full, luxurious flavor. Best suited to dry cooking methods such as roasting or grilling, but also great left as a bone-in/boneless roast.
