Our butchers believe in sustainable practices and offer a variety of cuts to deliver the most from each animal. Using pork belly for a perfectly rolled porchetta, jars of lard for savory baking, fresh house-made sausages, beautifully tied festive roasts, and our in-house charcuterie program, pork is honored and revered behind the Gwen counter.
Lard
Lard, or rendered pork fat, is obtained by gently cooking leaf lard (the fat that surrounds the kidneys), or fatback (the fatty layer that rests above the pork loin) over very low heat to separate the fat from the protein. Ideal for baking, lard creates a flakiness that can't be replicated.
