Black Strap Ham
With flavors resembling that of a southern ham, our blackstrap ham is vigorously rubbed with rum, molasses, fresh ginger and cayenne pepper. After drying for a total of 2-3 months the ham is cold smoked over applewood. A combination of old world (Italian/French) curing traditions, with a uniquely southern twist, our blackstrap ham re-creates the flavor of a classic southern country ham.
